If you have new clay pot then go for medium flame. Covering top with lid is quite important. After 15-20 minutes cooking, open lid to stir and check how much time required further. Most vegetables get cooked quite easily while meat often takes more time as per thickness. Because clay pot remains hot for very long time, you may need to have gloves.
